Blueberry & Raisin Apple Sauce Muffins
Directions
Preheat the oven to 350°F and line a muffin tin with paper liners.
In a medium bowl, whisk together the
flour
, baking powder, baking soda, salt, and
cinnamon
.
In another bowl, whisk the
canola oil
,
applesauce
,
raspberry preserves
, and eggs (or egg substitute) until smooth.
Add the wet ingredients to the dry ingredients and stir just until combined.
Gently fold in the
raisins
and
blueberries
.
Spoon the batter into the muffin tin, filling each cup about 3/4 full.
Bake for 18–22 minutes, or until a toothpick inserted comes out clean. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
