Taste:  Unlike many spices whose flavor intensifies when dry, fresh organic bay leaves have a much stronger flavor that decreases when it dries. Double the amount of dried herb if you’re using it instead of fresh. Add organic bay leaves at the beginning of the cooking process since the longer they simmer or cook, the more complex their flavor becomes. It is best not to consume organic bay leaves since they are woody and fibrous. You can remove them as you eat, or you can remove them before serving. Alternatively, you can use a mesh infuser or muslin cloth to hold the organic bay leaves so you can easily remove them. Made: Two varieties of organic bay leaves used in cooking are Turkish (Mediterranean) and California. The shape of the leaf is the easiest way to tell them apart – Turkish having a shorter, fatter profile and California having a longer, thinner silhouette.  Generally, organic bay leaves are sold in the U.S. are California while dried ones come from Turkey. When it comes to flavor, Turkish is more mellow than its Californian counterpart which tends to have more potency with a hint of mint. Bay laurel trees (Laurus nobilis) were used to make wreaths, and they were often planted in healing temple gardens.
