1 container (32 oz./4 cups) Cadia® organic fat free low sodium chicken broth

1 tbsp. Cadia® extra virgin olive oil 

1 tbsp. fresh parsley, finely chopped 

1/2 tsp. dill weed 

1/4 tsp. thyme 

1 bag Cadia® organic California Blend Vegetables 

1 cup celery, chopped 1 cup mushrooms, sliced 

1 small onion, diced 1 garlic clove, minced 

1/2 cup Cadia® organic brown rice

2 cups boneless skinless chicken breasts, cooked and cubed

Fresh ground black pepper, to taste


In a large pot, coat bottom with olive oil and sauté onion, garlic, mushrooms, carrots and celery for 3 minutes. Add broth, parsley, dill weed and thyme. Bring to a boil and reduce heat. Stir in brown rice and cover. Simmer for 15 minutes. Add cubed chicken breasts and continue to heat over medium heat for an additional 5 to 10 minutes until heated thoroughly and rice is cooked. Season with fresh ground black pepper.
