4 (6 oz.) boneless skinless chicken breasts

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 cup slivered almonds

1 tablespoon tamari soy sauce

1/2 cup Cadia® organic apricot preserves

1 tablespoon Cadia® organic whole grain mustard

1 tablespoon Cadia® organic unsalted butter


Preheat oven to 400° F. Wash chicken and pat dry, sprinkle with salt and pepper. Place in a lightly oiled shallow baking dish and bake for 10 minutes. In a small saucepan, combine apricot preserves, tamari, mustard and butter; heat over medium heat until preserves are melted. Pour sauce over chicken and continue to bake for 10 minutes. Top with slivered almonds and serve with jasmine rice.
